Cookie Monster!!!

Who doesn’t love chocolate chip cookies?they are delicious and melt in your mouth you can’t go wrong.

Ingredients

  • 1stick or 8 TBL spoons of unsalted butter
  • 1.5 cups all-purpose flour
  • 1/2 tsp kosher salt
  • 1/2 tsp baking soda
  • 1 cup milk chocolate chips
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 TBL spoon vanilla extract
  • 1 egg

STEPS


  • Brown butter – see note after steps
  • Mix both sugars together in bowl
  • Add Salt and baking powder
  • Add vanilla and egg beat till smooth
  • Add in butter once cooled
  • Add flour and chocolate chips
  • Bake at 350⁰ F for 13 minutes

Notes


  • When browning butter cut into 1 inch pieces heat on medium stirring occasionally you don’t want it to boil. Once you see brown specs at the bottom of the pot take off heat and let cool.
  • Make sure your butter is cool so it doesn’t cook the egg when combining.

SUNDRIED TOMATOES

Yup. They are delicious and super easy. With very little hands on time.


Ohh yeaaah

Ingredients

  • Tomatoes (I use cluster tomatoes)
  • Oregano
  • Pepper

Yes that’s really all you need!!

Step by Step

  1. Preheat oven to 250⁰ F
  2. Cut tomatoes in half from the top
  3. Lay pealing side on baking sheet
  4. Sprinkle oregano and pepper on top
  5. Bake for 1 hour then check and flip tomatoes
  6. Sprinkle more oregano and pepper
  7. Bake for 45 minutes more
  8. Flip tomatoes bake over additional 15 minutes if needed to meet your desired consistency

Today we learn . . PICKLES

Guys these pickles were so easy and they are so yummy. I made super spicy pickles but you can switch out the peppers.


INGREDIENTS


  • Pickling cucumbers 4
  • Rice vinegar 1/2 cup
  • White distilled vinegar 1/2 cup
  • Garlic 2 cloves
  • Dried habanero pepper

STEPS


  1. Cut cucumber in half long ways repeat into fourths
  2. Cut garlic cloves in half
  3. Use your knife and smash the garlic instead of cutting into chunks
  4. Remove seeds from habanero
  5. Dice the dried habanero
  6. Place cucumbers, garlic, and habanero in glass jar
  7. Pour in your rice vinegar and white vinegar
  8. Put the top on and give a shake
  9. Store in the refrigerator for up to 3 weeks.

This is so simple and hands on time is minimum. However you need to let the cucumbers sit for at least 12 hrs before consuming. I recommend a few days to really get the flavor. ENJOY!!

Sweet sweet “pizza”

I don’t know what to say besides the fact that it’s 1:30 am and I’m eating this pizza. If this was hard to make I wouldn’t be eating it right now.


I never said it looked good.

INGREDIENTS

  • 1 can pizza dough
  • Jar of pizza sauce
  • 2 table spoons butter
  • Garlic powder
  • Oregano
  • Pepper
  • Toppings of choice

Step by step


  1. Preheat oven to 350⁰
  2. Open the dough & roll onto sheet
  3. On half of the dough add whatever toppings you want
  4. Flip the other half over the first
  5. Melt butter then add seasonings
  6. Spread the seasoned butter on the dough
  7. Bake for 15 minutes and check dough

Pan friend chicken nugs and brussel sprouts

This was the fastest dinner I’ve had in a while. The only thing done before hand was the pimento cheese and that will come in a whole separate post it’s way to good to be grouped together.


Ingredients

  • 4 table spoons of butter
  • 3 skinless boneless chicken strips
  • brussel sprouts
  • Lemon juice
  • Garlic
  • Seasonings

To cook these brussel sprouts all you need is some butter, salt and pepper, and a little patience. You absolutely want to start the brussel sprouts first.

  • Put 2 tablespoons of butter in a pan
  • Turn to medium heat
  • Cut stems off of your sprouts
  • Half the sprouts and the outer layer should come off
  • Throw your sprouts in your pan with the melted butter
  • Stir your sprouts in the butter and season with salt and pepper
  • Cook on medium until soft about 15-20 mins

For your chicken you can season it however you like. I prefer lemon and garlic

  • Cut chicken strips into about 1 inch pieces
  • Melt 2 tablespoons of butter in pan
  • Cut 3 garlic cloves and toss in
  • Season your chicken
  • Throw chicken into pan with butter and garlic
  • Squeeze lemon into chicken and into pan
  • Cook on medium heat until chicken is 165⁰ F

Turkey burgers for days

These turkey burgers are simple and make a weekly appearance in my diet. I have learned how to spruce them up a little since I first started making them.

Ingredients

  • Ground Turkey
  • Worcestershire sauce
  • Onion powder
  • Garlic powder
  • Ghost pepper sauce
  • Goat cheese

I marinate my turkey for a few hours in the Worcestershire sauce garlic powder and onion powder.While the turkey is marinating it is a good time to go ahead and make our sauce.


For the sauce we take need to warm our goat cheese up. About 20 seconds in the microwave will do. I recommend warming in a dish that can also be refrigerated with a top. Once you warm the goat cheese you can add a few drops of your ghost pepper sauce now.


Time to cook our turkey.

  • Patty out into 4 burgers
  • Set your burner to medium heat
  • Cook burgers until internal temperature is 165.
  • Don’t forget to flip!

Last thing to cook is the onion!!

  • Slice onions about a cm thick.
  • Season with onion powder, garlic powder, cayenne pepper
  • Put onions in the pan you cooked your turkey in.
  • Fry until they are to your liking.

Cupcakes with blueberry compote filling.

There are a few different parts to these cupcakes and I’ll teach you how to do them all.

For the base of these cupcakes I used Betty Crocker french vanilla cake mix.

Creamcheese icing

To make this all you need is

  • 8oz cream cheese (softened)
  • 8 TBL spoons of butter (softened)
  • 3 cups powdered sugar
  • Vanilla extract 1 TBL spoon

It is important that your cream cheese and butter are softened for this. Once they are all you need to do is

  • Combine cream cheese and butter using a mixer.
  • Pour in vanilla
  • Mix in powdered sugar one cup at a time.

If after 3 cups your icing is not thick enough you can add more powdered sugar. Keep in mind once the icing is refrigerated it will thicken.

Blueberry compote

Blueberry compote sounds fancy right?

Wrong this stuff is so simple to make it’s bananas! Or blueberries I guess.


Ingredients

  • blueberries 1 cup
  • Sugar 4-6 tablespoons (I did 6)
  • Lemon juice 2 tablespoons or 1 lemon
  • Pinch of salt!

I normally put my blueberries in first but I honestly don’t think it matters. Turn your stove on to medium then pour in your sugar and lemon juice. I like to use fresh lemons, just be careful of the seeds.

Mix everything together and cover the pot. Stirring occasionally turn heat to low and let cook for 15 minutes.

This compote can be used on pancakes, toast or anything you want a sweet sauce added to. For me it’s the perfect addition to cupcakes. I’ll have that recipe coming soon.

Better than pumpkin pie.

As promised I opened the box from tasty. I got these absolutely delicious pumpkin spice and everything nice cookies. They came with the cake mix and some icing mix. Only minimal ingredients needed on my end. I want to start with saying that I am not sponsored by them. I just saw an ad and decided to try it. I was not disappointed at all. They had amazing customer service. The wrong package was sent to me and before I even received it I had an email in my inbox apologizing and the right package sent out to me. I am sorry to say I cannot give a recipe for these because it’s not mine to give. But I did make way to much icing so expect to see a recipe for some cupcakes and cream cheese icing soon!

When life gives you eggs. .

I know what you’re thinking. It doesn’t look that good. Don’t you know looks can be deceiving? This sandwich is fast and easy but it’s also good enough to eat for breakfast and dinner.


All you need is love. . . Wait.

  • Two eggs or as many as you want, you have to eat it!
  • A handful of cheese
  • Two slices of your favorite bread
  • Butter, 1 table spoon
  • Salt and pepper to taste

  • Turn the burner inbetween low and medium.
  • Put a table spoon of butter in the pan and let it melt
  • Once it’s melty crack your eggs into the pan and scramble them with a spatula
  • Stir your eggs and break them up every so often so they are chunky but still kinda connected
  • Now is a great time to toast that bread!
  • Take those eggs off the heat, sprinkle with cheese and give a small stir
  • Butter you bread
  • Put the eggs back on the stove until they are your desired consistency.
  • Insert warning that raw eggs can contain salmonella and that’s not on me
  • Slap your eggs onto your toast
  • Salt and pepper to taste

I used dairy free cheese and butter and it worked out great. If you want a little kick sprinkle some cayenne pepper on your eggs or instead of butter have an avocado on your toast.

We like fruity drinks round here.

Look we all know the stigma behind fruity drinks. I’m here to tell you that they taste delicious and beer tastes like dirt. I’m not sorry.


Personally I’m a big peach guy. So when Crown Royal releases their peach flavor I am all over it.


Here’s my favorite drink

  • 1.5oz peach Crown Royal
  • 1.5 oz peach schnapps.
  • 1 oz El Espolòn tequila.
  • Half a can of peach jumix
  • 2-3 oz of master of mixes mango

So while y’all are drinking your weak beer. I’ll be living my best life drinking my “fruit juice”.
